The Mittsu way 三ツの道
Mittsu (三) means three: the fish, the rice, and the hand that brings them together. In the Edomae tradition, great sushi rests on keeping all three in balance, and everything we do begins there.
We are a sushi restaurant in the heart of Canterbury, a place to sit down, slow down, and eat sushi the way it's meant to be eaten. Each piece is shaped by hand and set before you while the rice is still gently warm, because good sushi doesn't wait.
